Whole protein (Food Sensitivity) testing measures at sensitivity to only the outer, water-soluble portions of proteins. Whereas, peptide level testing (Food Zoomers) measures sensitivity to the inner regions of the protein, after it is denatured and cleaved into pieces. Antibodies to a whole protein will not recognize or bind peptides, even if those peptides are found in that whole protein.
