Serum zonulin levels can fluctuate throughout the day in response to gluten exposure, bacterial LPS, a high fat meal, and/or diarrheal pathogens. In contrast, serum zonulin antibodies (anti-zonulin) are more stable (once your immune system creates an antibody to zonulin, it tends to stick around for a while). In general, when you develop antibodies to an antigen (zonulin), it means your immune system has been regularly exposed to the antigen.
