Serum zonulin levels can fluctuate throughout the day (from zero to elevated), in response to gluten exposure, bacterial LPS, a high fat meal, and/or diarrheal pathogens. In contrast, serum zonulin antibodies (anti-zonulin) are more stable. In other words, once your immune system creates an antibody to zonulin, it tends to stick around for a while. Therefore, if you collected a blood sample while fasting (no zonulin triggers present), zonulin can be normal while anti-zonulin (reflecting past exposure) can remain elevated.
