Wheat grass (the fresh, sprouted leaves of the wheat plant) is gluten-free when harvested from a live wheat plant that does not yet have have seeds. However, wheat grass may contain gluten if the grass is harvested after the wheat plant developes seeds and/or due to cross-contamination during harvesting and processing.
